Vegan Cookie Dough Blondies


1 can chickpeas

3 tbs aquafaba (water from the canned chickpeas)

1/2 cup smooth PB (I use the 'Mayvers' brand)

1/2 tsp baking powder

1/2 tsp baking soda

1/3 cup sugar free maple syrup

2 tsp vanilla essence / extract

Good pinch of salt (about 1/8 tsp)

60g 70% dark choc roughly chopped


1. Preheat oven to 180C

2. Combine all ingredients except chocolate, in a food processor on high until smooth.

3. Fold chopped chocolate through batter.

4. Place into a small greased tin and bake for 20-30 mins until a skewer comes out clean.

5. Allow to cool in pan before transferring to a wire rack to finish cooling completely before cutting.
