PB Choc Chip Cookies



Makes: 15

Ingredients

1 cup buckwheat flour

1 chia egg (1tbs chia seeds + 2.5 tbs water)

½ cup peanut butter (I used Mayver’s Smooth Dark Roast)

1tsp vanilla extract

¼ cup coconut sugar

2tbs almond milk

⅓ cup coconut oil melted

¼ cup df dark choc chips

Method

  1. Preheat oven to 180

  2. Combine chia seeds and water in a small bowl and set aside until chia seeds have absorbed the water and it is a gel like consistency.

  3. Combine all ingredients (except choc chips) in a bowl.

  4. Fold through choc chips.

  5. Roll into tablespoon size balls and flatten into shape (they will not spread when baking)

  6. Bake for 15 - 20 mins until golden.

  7. Transfer to a wire rack and allow to cool.
